ARTISER MLE starter cultures are selected, concentrated, and freeze-dried lactic acid bacteria cells designed for direct inoculation of milk.
ARTISER MLE consists of mesophilic-thermophilic cultures with a predominance of mesophilic strains. They are characterized by rapid acidification, high proteolytic activity, and high heat resistance. These cultures are formulated to achieve optimal results.
Ideal for the production of:
- Fresh, soft, and semi-hard cheeses
- Particularly recommended for mold-ripened cheeses
Strains:
- Lactococcus lactis subsp. cremoris
- Lactococcus lactis subsp. lactis biovar Diacetylactis
- Lactococcus lactis subsp. lactis
- Leuconostoc mesenteroides
- Streptococcus thermophilus
Dosage:
- 2g / 100 Liters of milk
