Opis
Goat rennet paste ARTISER is obtained from kid rennet. It is a 100% natural product, GMO-free, without any flavoring agents, with only common salt (NaCl) added.
It has a natural color and odor, completely dissolves in milk without leaving any traces. This rennet has strong coagulation properties due to chymosin and pepsin combined with the lipolytic action provided by the naturally occurring lipase in kid rennet.
Dosage: 30-40g per 100 liters of milk
We recommend dispersing the rennet in cold water for a few minutes before adding it to the milk.
Activity: 1:13000 Chymosin 80% / Pepsin 20%
We particularly recommend it for producing cheeses with a sharp, distinct flavor.
