Opis

ARTISER Geotrichum Candidum is a selected, lyophilized mold culture of the highest quality for direct inoculation of milk. This mold is used in the production of St. Marcellin, Chevre, Brie, Camembert, and all cheeses with a blooming but thin rind. It is often used as a supportive culture for smear-ripened cheeses. When used with Brevibacterium linens, it quickly deacidifies the surface, allowing Brevibacterium to colonize the cheese more rapidly.

ARTISER Geotrichum Candidum exhibits proteolytic and lipolytic activity, which alters the structure and aroma of the cheese. Its rapid growth and surface colonization help control the appearance of unwanted molds on the cheese rind.

Ideal for the production of cheeses such as:

  • Camembert
  • Brie
  • St. Marcellin
  • Chevre
  • Other mold-ripened cheeses

Culture: Geotrichum Candidum

Dosage: 3g / 100 liters of milk

For best results, it is recommended to use ARTISER Geotrichum Candidum in combination with mesophilic, thermophilic, or mixed acidifying cultures, depending on the production process.

Store in a tightly sealed package at -18°C.
