ARTISER Brevibacterium Linens cultures are isolated and concentrated bacteria cells used for cultivating cheeses with a so-called "smear." They impart a strong, characteristic aroma to cheeses and give the rind a red-orange color typical of certain mountain cheeses such as Taleggio and Fontina.

ARTISER Brevibacterium Linens can be added to milk during production or used to prepare a solution for washing the cheese.

Brevibacterium Linens can be used alone or in combination with other molds, such as Geotrichum Candidum, which supports the development of the red smear.

Ideal for the production of:

  • Cheeses such as:
    • Taleggio
    • Morbier
    • Limburger
    • Munster
    • Reblochon
    • Other smear-ripened cheeses
