ARTISER Chymosin
is a rennet containing 100% chymosin, the key enzyme in cheese production. It is produced through fermentation on a plant-based substrate with Aspergillus niger var. awamori, stored in sealed conditions, and absent in the final product.
ARTISER Chymosin contains a milk coagulation enzyme that is highly specific for kappa-casein, resulting in a high-quality curd.
The structure of our chymosin is identical to that of animal-based rennet.
It is recommended for all types of cheese, particularly aged and long-aged cheeses, because, unlike traditional microbiological rennet, it does not carry the risk of bitterness during extended maturation.
ARTISER Chymosin is a vegetarian rennet.
Dosage: 4-5g per 100L of milk
